BONBAR is a cloud patisserie. No display counter, no theatre. Every order is produced fresh, in small quantity, on the day it is made.

Inspiration is taken widely, from the Basque country to Vienna to Paris, and brought home to Delhi without loss in translation.

Fresh production

Nothing is held. Batches are small, cut on the day, and made against the order rather than the shelf.

The Chef

Meet the craftsman
behind BONBAR.

Amandeep Singh began cooking at twelve. He trained at Le Cordon Bleu, London, and came back with a preference for restraint: fewer components, better ingredients, nothing on the plate that has not earned its place.

BONBAR is the result. A kitchen built around fresh production and ingredients sourced from around the world, run to the standard he was taught and the temperament he already had. He is not interested in spectacle. He is interested in the third attempt being better than the second.

The Craft

Precision lives
in the details.

Pastry does not reward improvisation. It rewards weight, temperature, timing, and the willingness to repeat something until it stops going wrong.

Chocolate is tempered to a degree. Batters are rested. Ovens are trusted only as far as a thermometer allows. What looks effortless is usually the eleventh version.

Weighing

Everything to the gram. The recipe is a set of ratios before it is anything else.

Tempering

Chocolate taken up, brought down, and held. Gloss and snap are the receipt.

Baking

Heat read by colour and edge, not by the timer. A minute decides the centre.

Finishing

Cooled properly, cut clean, packed the same hour. Restraint is the final step.

Ingredients

The finest ingredients need
very little introduction.

Only natural ingredients, sourced from around the world and chosen one at a time. Nothing is added to extend shelf life, because nothing here is meant to sit.

  • Chocolate

    Selected by origin before percentage. The bean does most of the work, so the kitchen does less.

  • Butter and cream

    Chosen for fat and for behaviour when cold. Both decide the texture long before the oven does.

  • Vanilla and spice

    Whole, never extracted for convenience. Used in quantities that read as depth rather than flavour.

  • Fruit, in season

    Bought when it is right and used the same week. Out of season, it simply comes off the list.
